Subito accattivante bordolese al naso con mora mirtillo e ribes rosso e nero laggiù dove te li aspetteresti ovvero nel mezzo della scena a prendersi un naso peperino e molto maremmano. Bocca più snella di quanto sospetteresti, affatto corposa e per niente mollacciona, si lascia bere con piacere e non si avverte alcol e calore, solo il tocco mediterraneo di un maremmano da passeggio. Il nome deriva dal nome di un vaso di forma appunto a birillo usato per portare in tavola il vino quotidiano.
